2021 Idaho Outstanding Dietetics Students

POCATELLO, ID - April 6, 2021

Recent Idaho State graduate, Abigail Mallory and undergraduate student Elisabeth Stephens were recently honored by the Idaho Academy of Nutrition and Dietetics with Outstanding Dietetics Student Awards.

Mallory

The purpose of this award program is to recognize the emerging leadership and achievement of students in ACEND-accredited and approved dietetics education programs and encourage their participation in the Academy of Nutrition and Dietetics. Outstanding students are selected by the programs.

Mallory grew up in northern Vermont and earned a bachelor's degree in environmental studies in 2004 from Bates College in Maine. After over a decade of organic vegetable farming and cross-country ski coaching experiences, she returned to school to pursue nutrition and dietetics. She completed her master's degree in nutrition and a dietetic internship in December 2020 from Idaho State University. Mallory attended her internship rotations in Twin Falls and Ketchum. Her masters capstone project was titled “Connecting Vegetable Preparation Education with Social Support: A Pilot Study of a Vegetable Cooking Class Series at a Community Garden”. With the help of her ISU advisor Dr. Allisha Weeden, Mallory created and ran a vegetable cooking class series at the Bloom Community Farm in Hailey. Mallory is currently working as a registered dietitian at St Luke’s Wood River Medical Center. At St. Luke’s, she works with inpatient, outpatient and community nutrition programs and she is excited to serve the Wood River Valley community. Mallory lives in Hailey with her husband and 3 year old son.

Stephens

Stephens is originally from Mountain Home and will graduate with an Honors Bachelor of Science degree in dietetics from Idaho State University in Summer 2021. Stephens is currently chapter president of Phi Upsilon Honor Society. She is currently conducting an independent research study looking at food insecurity on campus with the goal of presenting her research at upcoming professional meetings.
