Culinary classes are held at Idaho State University’s Albion Hall, Foods Lab, Room 102. INDULGE YOUR PASSION FOR FOOD AND VALUE!
For less than $20/class you’ll enjoy:

techniques by actually preparing recipes in class.

Essential Culinary Skills I
Learn essential culinary skills including: knife skills and handling; techniques for dicing and julienne; cooking methods; and useful culinary terms from mire poix to mise en place. Sample new recipes while you practice your new skills!

Essential Culinary Skills II
Start fresh or expand your knowledge of essential culinary skills. Explore techniques for seasoning and tasting food and learn the five foundation mother sauces and their many modern variations. You’ll also discover the BUFF style of plating and presentation (balance, unity, focal point and flow).

Oktoberfest
Get into the spirit of Oktoberfest while you learn to prepare classic German dishes including roasted pork loin, braised cabbage, and Spatlese.

Soup Basics
Learn soup variations from broth to cream soups while you sample recipes like clam chowder, roasted butternut squash bisque, and classic French onion. Learn garnishing techniques to jazz your soup up for a special dinner party.

Seafood Lover’s Dream
From salmon and shrimp to scallops and tilapia, this class will introduce you to methods of cooking succulent seafood dishes. Learn to prepare unique sauces to pair with seafood and when to poach, sauté or grill your seafood selection.

Highlight your holidays with some delicious new twists for preparing holiday side dishes like orange-jalapeño cranberry relish, cornbread and pepper stuffing, and gratin sweet potatoes with maple syrup.

From flank steak to flat irons, learn to identify different cuts of meat, differentiate which cooking method to use when, and pair with delicious side dishes.
